Building a reputation by twisting their beloved Asian cuisine, with simple techniques, crazy sauces and a lot of ingenuity, they are now celebrating a decade, without losing the essence of that first establishment, opened on October 10, 2013. And highlighting one of its hallmarks: the queue that everyone must religiously queue to be able to eat there..

Gonzalo García and Luis Gómez-Bua, chef and manager respectively, are responsible. They are in an excellent moment. Showing off a lot of humor, hospitality wisdom and a casual philosophy, which makes them one of the great icons of good eating in Madrid.. Without losing sight of the moderate prices, the risk in the recipe book and a tremendous interest in continuing to evolve daily, changing dishes, formulas and dumplings, with which they experiment whenever they can..

The beginning

“At first people came, they had a beer and we put a nigiri on top,” says Luis, leaning on the bar.. “When we opened, there were three of us. Roberto [Martínez], who is now in Tripea and the two of us”. Gonzalo and Roberto came from working together at Nikkei 225, the restaurant that was beginning, with the help of Luis Arevalo, to break the mold with its vibrant vision of Peruvian and Japanese cuisine.. “It should be noted that we were in 2013, a time when the economy was not very good,” Gómez-Bua recalls of those years. “Our friends looked at us as if we were lunatics.”. And I have always thought the other way around, when it seems like nothing is moving, it is just the moment where the opportunity arises.”.

The success of the proposal came a couple of months later, when they appeared in the Leisure Guide. “That week was crazy.. We had to start closing after each service because we didn't have time to set up the tables for the next one,” says Gonzalo.. His first dishes were simple recipes, but very well executed.. “We made a spring roll, because in the end this is still basic Chinese. But we did it all in the day. We added vegetables, shiitake mushrooms, cabbage, and bean sprouts. Which should have a good vibe.”

And they quickly had to decide how to organize the space inside. They didn't like the idea of reservations and decided to make people wait. They soon gathered beyond the official seats. So they decided to deliver some numbers half an hour before opening. At 1:30 p.m. for lunch and at 8:30 p.m. for dinner. “There are 17 officers, but sometimes 20 come in. It depends on how the number of diners per table fits,” reveals Luis.

Dumplings, lampreys and pig ears

Their dumplings also began to become popular, with more traditional flavors and nods to the less well-off East.. “At first we made sushi and our martianadas. And in the end people always came to try the latter,” the chef continues explaining.. They had a maki called Your way, emulating the hamburger they made at Burger King, Do it your way, where you could choose the ingredients you wanted..

Or a ramen broth with Galician cacheira; but then crazier dishes arrived, like his fried ear smothered over mashed potatoes.. “That was a great dish.”. Suddenly everyone started asking for ears only.. And, of course, there are not ears for all the restaurants in Spain. So there came a time when we stopped doing it.”.

As a Galician, what impressed Luis was the lamprey they made: “We have made it in many different ways. As a sausage, included in a Japanese chirashi or grilled in a four-handed with Tricycle”. Among the iconic dishes that in some way are also part of the history of Nakeima, is an aspic that they made with the marrow of the tuna and to which they added barnacles.. Old and innovative recipe book.

“That was a long time ago. Now you can see it in other restaurants, but we did it long before. The gelatin looked like a breast implant, something like that was a little cloudy.. And then the texture is like a jelly, but resistant, with a sea flavor, but not too aggressive either,” Gonzalo describes.. “There are still people who come today and say, 'if you have bone marrow, don't put it in me.'. It is a dish that has marked people, not for the better, but it defines what we do.”. And laughs out loud.

Tribute to 10 years

“Practically, we add dishes every week,” admits Gonzalo, who never stops in the kitchen, imprinting his personality on more or less known formulas.. If you go now you can also find a look back at his work in this decade. “We want to recover dishes from these ten years and mix them with new ones. Right now we are making the shrimp cocktail, a shrimp wonton, on the one hand, and then a sauce boat, as small as silver, which I love. A roll like that like French, a little old,” says Gonzalo. The result is like a shrimp cocktail but in two passes. On the one hand, the shrimp wonton and, on the other, the sauce boat with a red shrimp tartar and pink sauce.

There is also their legendary trotters carpaccio. “We cook the trotters, we bone them, we make a roll and we cut it thin. It is a recipe that Roberto learned at the Celler de Can Roca. He told us about it and we thought it could be a good idea to make a version”. In that menu, which one can season to their liking, there is a pilpil of enokis, nigiris of shrimp and Iberians, a tataki of low loin of Galician blonde, a temaki of razor clams, a classic siumai, takoyaki of grilled ear, ravioli of brie, a pork dumpling with five spices…

“Then we have the chicken with almonds, that is very fun too, which are some almonds. We make it in the ocoo, a Korean pot. It's almost a spoon plate. There is also our veal with peppers, which has veal tongue and green pepper,” he reveals while confessing that “probably next week they will have changed half of the dishes.”.

Haranita, his other right eye

In addition to Nakeima, this year they decided to open another space. On Victor Hugo Street, very close to number eight Gran Vía. There, in a two-story space, with a large open kitchen, they have moved some classics and have launched different baos, for example with chicken and carabineros..

“And there's our tripe salad, which was part of Nakeima's early years. Also a cochifrito, which is our version of sweet and sour pork,” the two explain.. Their cuisine, that of Haranita and Nakeima, is committed to very defined flavors within the spectrum of what oriental cuisine is.. No flavors that stand out in a crazy way.. Gonzalo, as the chef who from the beginning was leading the way, and Luis, as the one who is defining the lines of the business and ensuring that it is sustainable and does not get out of hand, are clear that they are experiencing one of their best moments. Enjoying what they do and being clear that their vision of Asian gastronomy is infinite..

“I think that adding many ingredients in the end saturates what you want to tell,” Gonzalo clarifies.. “We make much smaller dishes, which are practically one or two bites. “We like balance and more subtle flavors, not as pronounced as the cuisine you can find in Southeast Asia.”. An essence and a flavor of which they are the best representatives.

Rufián specifies that a coalition with Podemos in the European elections is not considered

The spokesperson for Esquerra Republicana (ERC) in Congress, Gabriel Rufián, has expressed his wish that Podemos and ERC, together with Bildu and the BNG, can work together to pressure PSOE to comply with its agreements, but has He specified that with this he is not proposing an electoral coalition with a view to the European elections of 2024.

Jorge Pardo, the jazz musician who managed to conquer all flamencos

Last week he was in France and next week he will have a small tour of Brazil. Jorge Pardo, 66, is one of the most important and influential jazz musicians. His flute and sax can be heard on albums by Camarón, Paco de Lucía, Chick Corea, Pata Negra or Ray Heredia. He is one of the figures who best understood the mix between flamenco and jazz, not only collaborating with other musicians, but also signing some of his most iconic works.. In addition, he is from Madrid, born in Manuel Becerra, in the nearby Eva Perón park, he practiced with his first saxophone, back in the sixties..

When time allows, it is not difficult to see him in one of the rooms in the capital.. At the end of the month, on November 29, he will play at the Galileo Galilei with the Brazilian Guinga, in a very special concert. “Guinga's music is high-voltage music. It also belongs in some way to an important collective, generational and local heritage.. So, in some way, it has always been present,” he admits of this live show: “I'm very curious to see what comes out. And let's say it's also going to bring me closer to my Brazilian tour. So it will be a whole series of very nice coincidences.”

In fact, he recognizes that his sound has always been very close to Brazilian music. “I also lived in Brazil for a while. And I had my references, when I was very young, like Hermeto Pascual.” Pardo considers himself a modern-day musician, “in the purest sense of the word.” He likes to live in today's time. “And that's what motivates me. What I like most now is listening to new people, both flamenco guitarists, there are a lot of them, and the new generation, and with whom I understand myself better than with those of my time, or my youth”, confesses this National Prize for Current Music, awarded in 2015. “And, of course, with the legion of flutists or other instruments that are dedicated to flamenco, I love that situation”.

Madrid, the cradle of everything

When Pardo began to integrate his instrument with that of other musicians, he focused on flamenco. And he did it in his city. “Madrid has always been a reference city. It's not going to hurt my mouth to say that world. In the sense of flamenco, but understood flamenco as immersed in a global culture or connected with other cultures and urban tribes,” he reflects.. “I believe that I am, in fact, in some way, some sociologist could say that I am a child of that”. Morente, Camarón, El Bola

Pardo goes out into the street, goes to the bars, to other musicians' houses and begins to contaminate his songs and his albums with that mixture of flamenco so typical.. “Music has always fascinated me.. I have always wanted to know more and more. And with flamenco it was like that. It's one thing to be in the environment and let yourself go and soak it through your skin.. But then another is to choose and say let's see how to make a real malagueña or let's see how to make a taranto or let's see how to say a fandango and I have been one of those.”.

Jorge Pardo's life has always been linked to that of great musicians, figures who in some way have also made his way of playing and recording follow the paths that he has ended up traveling.. “It's always difficult to say names, suddenly a nebula comes to mind”, think about them. “You always get the loudest ones for everyone, yes Morente, yes Camarón, yes Paco, yes such, yes this other, but in reality there have been many important people”.

And that is where names appear such as Gerardo Núñez, Agustin Carbonell, better known as El Bola, José Antonio Galicia, El Gali, Juan Manuel Cáñizares, Montoyita, Juan Diego de Jerez. “I have always been an easy boy and I have been generous, let's say, in terms of collaborating with others,” he says.. Some of his most significant albums, A mi aire (1987), Las cicadas son casi sordas (1991), Veloz (1993), 2332 (1997), were recorded in the legendary Nuevos Medios of Mario Pacheco and Cucha Salazar.. Record that, despite being more than thirty years old, still sounds great. “At the time, yes, they were greeted by the very fans, but then they were rejected by the programmers,” he recalls..

At full capacity

And yet, Pardo continues non-stop, touring like few artists of his generation, maintaining a very clear connection with younger musicians.. Adapting to the new times, doing a lot of live shows and recording as much as possible, when time allows.. “I am at a time in my life when I have accomplished many things and, let's say, I am a free person.”. I always have been, but more and more. And in reality I do what I want,” he points out about this vital time, where he has also indulged in whims, such as being the protagonist of an interesting documentary, Trance, which accompanies him throughout the entire planet..

“In that, what I feel like, is playing, which is what I like most in this world.”. Apart from seeing my people happy and well, well, if you catch me at a concert, you catch me playing and meeting new people and with new music, new influences, new challenges to meet and earning a little money to pay my bills.”. And it ends with: “That is my paradise. So I'm going to continue with that until I have to leave this world.”. In addition to his concerts with unusual musicians, it is not difficult to find him on tour with his inseparable Melón and Bandolero.

“We are always investigating with our flamenco styles. That is one of my fantastic references, wherever we go, to France, through Europe, wherever we go, what we do is recognizable,” he explains.. And playing with Arab musicians, another of his weaknesses: “I love all those openings to partly unknown but familiar music.”.

The 'trap' article of the amnesty law that limits the interpretation of judges

Article 2 of the amnesty law is in principle presented as the red line that the PSOE has marked for the independence movement. Under the title of “exclusions”, it includes the facts that will not be able to benefit from the amnesty, the crimes that are unforgivable: terrorism, torture, treason…. Its wording suggests that the socialists have remained firm on some ends of the negotiation, but when putting these “exclusions” into practice, a complete work of legal engineering is glimpsed: article 2 does not harm the leaders of the process, but it limits the interpretation that judges can make.

A copy of the Penal Code

In article 2, both the words that are included and those that are omitted matter.. Its objective is reflected in section F, which copies another article of the Penal Code, except for one small difference: the PSOE has eliminated its references to the “nation” and “ideology.”. In this way, the final wording implies excluding the following facts from the amnesty: “Crimes in the execution of which racist, anti-Semitic, anti-gypsy motivations or other types of discrimination regarding the religion and beliefs of the victim, their ethnicity or race would have been appreciated.” , your sex, age, sexual or gender orientation or identity, reasons of gender, aporophobia or social exclusion, the illness you suffer from or your disability”.

At first glance, it seems that the PSOE and its partners have been concerned about leaving this type of discriminatory acts out of the amnesty, but doubts arise when comparing it with the aggravating factors of criminal responsibility included in article 22.4 Penal Code: “Committing the crime for racist, anti-Semitic, anti-gypsy reasons or other type of discrimination referring to the ideology, religion or beliefs of the victim, the ethnicity, race or nation to which they belong, their sex, age, sexual or gender orientation or identity, reasons gender, aporophobia or social exclusion, the illness they suffer from or their disability”.

The rewriting is not accidental. By excluding discrimination “referring to ideology” and “nation”, the PSOE tries to shield the independence movement from accusations such as the one made by Vox in the procés trial, when it tried to aggravate the sentences, pointing to the aforementioned 22.4 of the Penal Code.. It is not, therefore, about the words that the law contains, but also about the message it sends with those it erases: judges can object if they see discrimination against gypsies, the poor and the disabled – which in practice has no effect on the causes of the process—, but in no case before attacks for reasons of ideology and nationality.

In fact, in the PSOE they know well the article of the Penal Code that they have copied. Since Pedro Sánchez arrived at Moncloa, the Government has reformed it twice: in 2021, when it included the concepts of “age”, “aporophobia” and “social exclusion”, and in 2022, when it added the concept of “anti-gypsies”.

A lifeline for Puigdemont

Time and time again, Article 2 makes it clear to judges what is left out of the amnesty so that they are even clearer about what is included.. The strategy is repeated in section C, which excludes “acts classified as terrorist crimes”. The National Court investigates this type of crimes in two proceedings linked to the independence movement: the one against 12 members of the CDR and the Tsunami Democràtic, in which the former Catalan president Carles Puigdemont and the general secretary of ERC, Marta, are listed as defendants. Rovira, among others.

The exclusion of terrorism crimes would in principle leave both procedures out of the amnesty, but the PSOE and its partners avoid that scenario by adding seven words below: “As long as a final sentence has been handed down”. Neither the proceedings against the CDR nor that of Tsunami have even reached trial, so, in practice, this supposed promise to leave out “terrorism crimes” has no effect whatsoever..

Section A also includes another paragraph that affects one of the lines of investigation into the cause of the Tsunami: the possible link between the death of a French citizen due to a heart attack and the blockade of the El Prat airport.. His death threatened to complicate the amnesty for those investigated in Tsunami, but the law includes another “exclusion” that would block that effect: “Wilful acts against people that would have resulted in death.”.

Fraud refers to the deliberate will to commit a crime knowing that it is illegal.. In this specific case, it would imply demonstrating that those investigated by Tsunami carried out the blockade of the airport with full knowledge and willingness to cause the death of this citizen, so, indirectly, this exclusion of “willful acts” would also benefit to Puigdemont and Rovira.

A risk for 45 police officers

The writing of this article reaches such a point that the only ones who in principle run the risk of not being able to benefit from the amnesty are the 45 agents whom the Investigative Court number 7 of Barcelona prosecuted last January: “[The facts] “can constitute not only minor or less serious crimes of injury, but also crimes as provided for in articles 174 and 175 of the Penal Code,” the judge warned in his resolution..

Article 174 is the one related to torture and the “exclusions” in section B point directly to this type of acts “as long as they exceed a minimum threshold of seriousness”. The text does not specify in any case what the yardstick will be: unlike what happens with acts of terrorism, to exclude crimes of torture it does not include a requirement as categorical as that “a final sentence has been handed down.”.

A shield against the EU

Sections D and E of Article 2 also draw a similar conclusion: “Crimes that affect the financial interests of the European Union,” warns the first. Throughout 23 pages, the bill makes no mention of Spain's financial interests, but with this reference, it anticipates the debate that is taking place in Brussels to assure the European authorities that, as far as they are concerned regards, you have nothing to worry about.

The last exclusion once again refers to facts that do not contemplate any cause linked to the independence movement, but, at least in this case, the PSOE does seem to row only in its favor.. “Crimes of treason and against the peace or independence of the State and related to National Defense”, establishes section D. This paragraph allows the socialists to highlight the supposed red line that they have marked for the independence movement and, at the same time, warns them not to go over the line when seeking support from foreign powers.. From now on, you can only negotiate with them.
